There are quite a few results in Google for this error message.
https://www.google.com/search?q=552+msg+rejected+as+spam

This is not something that Gravity Forms has any control over. It's a combination of the server the mail is coming from, the message headers, the to and from email addresses, the content of the message, etc. Every email provider uses different filtering technology and rules.

For tips on how to avoid the spam folder, you can use Google again:
https://www.google.com/search?q=how+to+get+your+message+past+spam+filters

You can also improve email reliability using the tip covered by Yoast here:
http://yoast.com/email-reliability/

Finally, you can use an SMTP service like Sendgrid for more reliable email delivery. They have a free account which will send up to 200 emails per day:
https://sendgrid.com/user/signup

Lately most of the contact form emails sent to my clients (especially ones with GoDaddy or that use Norton AntiSpam) have been getting rejected as "552 msg rejected as spam" which from what I gather means the messages are being rejected because the content of the email sees SPAMMY to the ISPs but the emails only contain the contact info from the person who filled out the form so does anyone have an idea of why this is happening?

What content in a Gravity Form email would be causing ISPs to think the email is SPAM?
