First, our date field supports either a calendar or open inputs for month, day and year. Drop downs are not an option.
The custom validation is possible but will require using a hook and somebody with PHP experience.

All of the similar topics and searches lead me to "The product you have purchased does not give you access to this forum."

I am searching for an availability checker. The user inputs month/day/year (preferably in a via drop down boxes rather than a calendar.)

The checker compares against a list of booked dates and outputs a "date available contact form" or a "booked but we'll give you referrals" contact from. I'd like the the date available function to send an email with personalization from the form.

Is this possible with Gravity?
