What is likely happening is the mod_security settings on your server are blocking the AJAX request which isn't able to save the form. This happens when mod_security settings are too strict. Disable all the plugins except Gravity Forms and it still happens. Activated 2010 theme and it still happens. Also bumped up the PHP memory limit to 64M. But the problem persists. Oddly enough, if I create a new form and add a checkbox option before anything else, the form will save properly. But now, when I try to add a checkbox field and then click UPDATE FORM, I get an endless "Saving Form, please wait" spinner. Out of curiosity, I also tried adding multiple choice field and a dropdown field. Each of them fail in the same way. </p>
