They are organized by Gravity Forms an have their own folder structure. The uploads are designed to be downloaded via the Entry Detail page or the Notification email. I'm not sure if we will change this in the future, it's a possibility but we haven't discussed it. I have a feeling that as is, it may become super unorganized pretty quick. For the most part I feel like a default location is great, but I can see a circumstance for my project where I would like every uploaded file in a designated form to route to a separate folder.
