Item 1 is not built in to Gravity Forms. There have been a couple relevant conversations recently, but I'm not sure if they will be accessible to you if you have not purchased Gravity Forms. I believe they will be because they are in the "Feature Request" forum:

http://www.gravityhelp.com/forums/topic/bookings-appointments-reservations-and-rentals
http://www.gravityhelp.com/forums/topic/feature-request-remove-from-checklist-on-submission

Item 2 is built in. There is a user confirmation email which can contain any or all fields that were submitted and can be customized as well. There is an email field which should be used to accept email address input rather than a text field, as it will perform some validation on the email address.

Hola!

I'm thinking about purchasing gravity forms (developer licence) and I have a few questions...

1. Is this scenario possible using gravity forms with paypal addon?. Booking form > Someone wants to book a hat :s for 2hours on 1st Jan '12... This slot is available, they choose it, proceed to payment, complete payment. The time field on the form will now longer allow a booking during this time on the 1st Jan due to the slot being filled.

2. Is it possible to have a text input for email address that on completion of the form, the form will also be sent to that email? For example, a user is completing a self assessment test and will be sent a copy of his answers for reference.

Cheers.
