When you use the merge fields, they are put on the left hand side, not on the right. Adding in each of the merge tags and clicking on the math symbol you need to use to get the result you want. There isn't any special documentation for this feature currently. As I said, I am going to be revamping all of our documentation over the next few months to update them, provide more examples and extend it to be more useful to more people if I can. Gravity Forms processes the data using order of operations. So depending on the complexity of what you are trying to do, how you set things up will be different.
