In your entries screen in Gravity Forms, do they have the correct time associated with them? The time that you are talking about is it a field in your form or the entry time built into Gravity Forms?

The file actually did read "localhost". I went ahead and checked another server as well and it was also set to CST.

Is your MySQL database on a different server? If your wp-config.php contains a value other than "localhost" for DB_HOST it probably is on a different server. It's possible that's where the different timezone is coming from.

When I export entries for my form I notice that the time in the entry date column is actually off by 5 hours. We are on CST and I have checked both my Wordpress and Server settings to ensure they are set to the correct timezone.

Is there somewhere else I need to check? Where would it be pulling this time from?

Link to form: http://register.libertychristian.com/?page_id=728

Thank you for any help!
