You will most likely run into issues. I wouldn't recommend it. Unfortunately right now if you want to send plain text emails it's all or nothing. I was thinking as a work around I could have two versions of Gravity Forms installed (wordpress). One for simple text emails, and another for standard HTML emails.</p> <p>Is this even possible? </p>
