I just submitted your form and saw this on the confirmation page: "Thank you, Chris!" So, I think it captured my first name correctly. I can safely say this is not something Gravity Forms would do, but it could be something unique to the processing you're doing (if any, using functions.php or jQuery) or your visitors. For example, the entry will appear as: First name: Bob Last name: Bob It was never last name, last name. Only first name, first name. Out of 86 entries, 7 had this occur. This seems statistically too high to be a coincidence, user error, or an auto-fill program messing up...
