If your old site is still accessible, yes you could export the forms. But you'd have to be able to login to your old site and export the forms using the Import/Export tool. It isn't stored on the file system. They are dynamic and database driven. The plugin itself must run out of the wp-content/plugins/gravityforms folder otherwise it won't function properly. Your form should still exist in your database if you didn't delete the data.
