You can store the person's name who submitted the form, in a custom field attached to the post, and then display that in your template. If you are not creating a user for the person submitting the form, then you can't set the author name to their name, since the post author needs to be a registered user. You can set a default editor in the form builder, then in your template, display the name which was submitted the form in the area where the post author would normally be displayed. It's a bit of a hack, but it will work if you don't want to register the user. </p>
