Is there a gravity Forms Hook or something that I can use once the form has been submitted successfully with full access to the form data. I guess that is more the question. And an example of how to access the form data in the hook would be great.

			<description>&#60;p&#62;This isn't something Gravity Forms does out of the box so it would have to be done as a feature.  I haven't heard of anyone doing this.  You would have to write custom code to output the entry data in an XML format and there is no standard XML format so you would have to customize the code to output it in the format you want.
