Pretty simple, I'd love to see Gravity Forms have the option to use HTML5 placeholder tags. Currently this is possible through this plugin...

http://wordpress.org/extend/plugins/gravity-forms-placeholders/

You can see that plugin as well as Gravity Forms on this contact form...

http://www.singlerchiro.com/contact-us/

Notice how it's got an HTML5 placeholder (with a JavaScript fallback for older browsers) for the fields? This is nice because not everyone wants to have a label before their field. In my opinion this solution makes the forms look so much cleaner.
