I needed to disable email with my web host as I have my emails hosted through Google and the contact form was getting confused around where it needed to send the email. I have reviewed the information from the link, made some changes, and can see that the Notification to User is now working. The Notification to Administrator still isn't working though and I'm not sure what else to do! I can see that the Gravity Form is capturing the information but it is remaining stuck in my Wordpress site. If I go into the Notifications section in my Wordpress site and re-send the information I then receive it via email. But unless I know a contact form has been completed I don't know to go into do this!
