Pricing fields are different, they are more complex because of the way multiple values are stored as the value. I will look into this, it sounds like a bug specifically related to pricing fields and showing only values with the {all_fields} merge tag. Gravity Forms v1.6+ has more functionality related to the {all_fields} merge tag. It lets you control what is displayed.
