We don't always know what will change or not with WordPress so I can't tell you what to expect with each new version.. most of the normal WordPress point releases haven't introduced drastic changes. If you keep an active subscription, then you're always going to have access to the compatibility updates we release along with any bug fixes, new features or versions that we release and it shouldn't be a concern.

Once your subscription expires, you're pretty much on your own. If nothing significant changes in WordPress, then your forms should work normally. If something does change and you don't have the latest version then the form builder may very well break.

Basically, once the subscription expires, can I still create new forms or edit old forms on that website?

So I recently ran into an issue with your plugin that makes me hesitant to purchase it for my own use. When WP 3.1 came out, there was an upgrade needed for GF. Without that update, the client was unable to create new forms. It also turned out that they needed to update their subscription with GF to get the update (that I understand). However, why would the client lose the ability to create new forms, is it due to the WP 3.1 Update? Should I expect this to happen in the future with every WP update?
