It would be great if a form could be added to a category by default and then allowing the user to choose a further category using the built in Category form element.

I'll look into this. You are correct, right now if you add a category field to a form you can no longer set the default category in the Post Title or Post Body. We can look into allowing you to set some default categories regardless of user selections.
