Is there a GF -> Google Docs plugin hiding somewhere that I'm missing or is it still in the works?
It is still in the works. It got pushed back because the biggest need that people seem to have with Gravity Forms was related to passing data to payment gateways and e-mail list api's. We have half a dozen people now working on add-ons, and we are looking forward to releasing more great things soon.
This would be a great feature that I had hoped already existed. We utilize Google Drive (Docs) in our organization for sharing and collaborating on files, so this would be natural fit for managing things like event registration entries and other data we collect with GF forms.
I agree. You could take exports and put them in Google Docs manually but I would love to see some enterprising person create an API connection between a form submit and a document or spreadsheet creation. We just haven't got around to doing that yet. We do have some great stuff coming though. :)

But I need Google spreadsheet integration, not G Calendar integration.

But the product does not look ready to launch yet. (Put your email down to encourage their dev team to hustle and finish!)
