I have a client that has Infusionsoft and wants to be able to sell his product to three different countries through 3 different domains using 3 different currencies. I just need to confirm that this is possible with Gravity Forms.

Gravity Forms does not have multiple currencies built-in. There is the following third party add-on that provides such a feature though: http://wordpress.org/extend/plugins/gravity-forms-multi-currency/
But if it is on three different installations of WordPress, you could have each of them set-up with mostly the same form, each with their own currency setting.
