Instead of manually selecting all the fields it would be user-friendly to have a ‘Export all fields’ option. Just like I can choose to insert all fields into the notifications.

I know exactly what you are talking about, we almost put this in 1.0 and unfortunately other features trumped it the upcoming 1.1 release. I will look at revisiting this.
