Before I purchase, I'd like to confirm that all form data can be included in the notification email sent to the intended team member recipient, not just the person who submitted the form. Is that correct? Is that done with {merge fields}?

Yes, this is a built-in feature. You are able to create as many notifications per form as you wish. Merge tags available for use can be found here:
