    I think it would be very useful to have control over the fields that are notificated to a user.

    In some cases we don't want to send some infos to a user, like email address or other private informations

    I think this feature already exists. In the notification to the user, if you don't want to use {all_fields}, you can add individual merge tags of what you do want sent. This gives you total control over both the content of the message, and its design.
