I understand that members will be able to create a post. Will they be able to recall the post and edit the information (images + content).
Will users be able to enter meta tag data via the Gravity form?

  2. Users will not be able to edit their posts using Gravity Forms. Gravity Forms will capture the information to create the post, but it won't handle post editing. It's something that's being considered for a future version.

If meta tag data means meta description and meta tags, yes, your form can capture that information. It's up to your theme or a plugin to display it though. If you're using one of the WordPress SEO plugins, most store the meta description, meta tags and sometimes title in custom fields. You would need to find out the name of those fields, then add a field to your form that is mapped to that custom field.
