You can allow anonymous posting, and require only an email address, but the post will not be attributed to them, because they are not a registered user on your site. You can set a default user and make it something like "User Submitted" or "Site Member". You can choose not to display this in the template, if you like.
To email comments to the 'author' of the post, you will need to add some sort of WordPress plugin. You can store the submitted email address in a custom field, then notify that email address, rather than the email address associated with the user, when a new comment is posted. That functionality, notifying the email of a new comment, will not be handled by Gravity Forms but by WordPress.
