just wondering i have seen some that let one save their data and come back and log in again and the data they had filled is still available and one continues up until they submit the form data can gravity do this ?

Currently no. You would have to do some customization to add that type of functionality in the current version. I know others have done it, but it's not something we've added to the core so far although it's on the to-do list for a future version.
