I'm using another plugin to create a number of custom fields, but I'm using the _ prefix so they don't show up in the interface.
It seems as though GF hides all the custom fields that have a _ prefix though.
Is there a work around that doesn't involve renaming my custom fields to something without a _ prefix?
Hides them in the drop downs in the form builder you mean?
There is no work around that I know of, but you can always type in the custom field name if it does not appear in the drop down.
Ah, I missed that. with the "new" field.

Please let us know if you have trouble. If you type in a custom field in the "new" field which already exists, it will be used rather than created.
