I am wondering if there is a way to have an online form via GF that allows me to accept 'open-ended' payment amounts? I would like to have a QR code to my online form in all my invoices so that customers can scan it and then pay me online via the form. The would need to enter in the total amount themselves though. Is that possible?

Yes. The Product Field has a field type called "User Defined Price" that let's the use submitting the form enter the price. So they can enter the payment amount and then pay that amount when they are directed to PayPal to complete the transaction.
