Can we add a new category at the Bulk Add / Predefined Choices?

Please explain more what you mean. You would like to add a new bulk choice, maybe "automobiles" and what choice would list a bunch of auto manufacturers? Do you want to offer new choices in the "bulk add" section for your users who create forms?

Also, recently saw this, available in 1.6:
http://i.imgur.com/d238a.pngGravity Forms v1.6 does have the ability to save your own pre-defined/bulk choices. It's an option available in the pre-defined/bulk choices window.
Is that what you're looking to do?

The choices are editable and it saves, but I would like to add a new bulk choice for the users that will create the form. I will use this for regions, city / municpality.

It worked exactly like that for me. I created a new list of countries, with a few removed, then saved that as "Edited Countries". Then I opened up a new form, and was able to see that choice that I had previously saved. Screenshot http://min.us/m1GO6oznl

No, It wasn't. I have no Save as, Custom Choices, Predefined Choices and Edited Countries feature on my Bulk Add. We have a general license but I don't know how to register with a license.

Which version of the plugin are you using? The function is not available before 1.6, and 1.6 is a release candidate now.
If you're using one of the 1.6 versions, beta or RC, please post the version so we can investigate.

Also, the name "Edited Countries" was one I created. It could have been "Chris' Custom Category" instead: I made it up. The Predefined Choices and Custom Choices appear in the menu after you have saved your first custom choice.
