I am using gravity forms across a number of my websites, and would like to know when a completed form comes into my email from which website it was derived. How do I do this in gravity forms?

In your administrator notification setup, you can select "embed url" as an option to display in the message. This displays the URL of the form that was submitted. You can use the variable in the subject or message body wherever you prefer.
