Right now it can't be done without writing custom code and using the available filters to pre-populate this field. With this being an MU install you aren't going to want to go this route because it would have to be done on a per form basis.
We plan on adding the ability to default the country, I will try and get this included with the next version release.

in version 1.5.2.3 the default country of the address fields can be selected but is not used in the frontend.
It is shown in the backend but in the frontend the dropdown is just empty and one has to select one of the countries to continue.
Any fix for that?

In my tests using v1.5.2.8 if you set the default country in the address field it is shown on the frontend. Here is a screenshot of an Address field where I have set the default country to United States: http://i.imgur.com/TEhIe.png
I would suggest updating to v1.5.2.8 as you are running an older version of Gravity Forms and see if that corrects the issue.
I updated to 1.5.2.8 and all it did for me was change the CSS.

Is this happening in the preview as well or only the frontend?
