This is behaving correctly.
Checkbox fields do not behave like radio button and drop down fields. Each checkbox is an individual field. So each checkbox choice is available to add as a column on the entry list page.
This differs from Radio Buttons and Drop Down fields where the Field Label is a column and the selected value is the value in the column.
Checkbox Fields are actually multiple fields in one with each checkbox being an individual field. They are grouped together for presentation purposes because of how checkboxes are used. But because they are also individual fields, they are available individually when configuring the entry list page.
The default entry list view is configurable. By default it just displays the first few fields on the form. But as Alex pointed out, you can use the entry list customizer to edit this and configure which fields are displayed.
