I'd like to have the string 'United States' be the first in the series of country names in the country drop down field. Where do i change that in the coding?

I think you have two options here. If you want to use the "address field" then you can have the default country be the United States, so that it is selected already upon form load. This you can do in the address field settings in the form builder tool.
The other option you have it to hide the country drop down in the address field (which is another option in the editing of the address field). Then add a new "drop down" field to the form and click the "bulk add/predefined choices" item. This will pop open a modal box and you can then select "countries" from the list on the left. When you do, the countries will show up on the right. Scroll down to find the United States and cut it out of the list and paste it at the top of the list and then insert the choices.
