How could I append text to the end of the send to email address. (this is how I automatically send the email with an autoreponder) So when someone submits their email address to: myname@domain.com gravity forms actually sends to myname@domain.com.moretext.com

Do you want to add it to the actual email that is saved with the entry or only to the send to of the notification email that is sent?

Unfortunately right now we don't have API hooks on the user notification Send To address. We will get fix this in the next release so this would be possible via a small code snippet using an API hook.
There is a way to do this now, but it involves a lot of steps and wouldn't be ideal.
I'd suggest waiting for the next release and then we can give you a code snippet that you can use to accomplish this.

We plan on releasing an update sometime in the next couple weeks. It won't be the 1.4 update, it will be 1.3.13 which will introduce some minor new fixes, features and enhancements.
