Is it possible to have a form with a drop down select menu that when you click on it, it drops down a list of options, and when you click on that option it will load a gravity form for that one, and if you click another option from the drop down it will load another gravity form and so on...

This isn't built into Gravity Forms. Your best bet would be to redirect people on submit based on the option that they pick, and the easiest way to do that would be to use our new 1.7 beta which has as many confirmations as you want.
