Gravity Forms could be used as a basic appointment scheduler, however one issue is it wouldn't keep track of the appointments and automatically remove appointment dates/times that are not available.
Gravity Forms is a general purpose form builder and data management tool so out of the box it doesn't have scheduling functionality.
It would be possible to implement, however it would require custom code and the user of available API hooks to interact with Gravity Forms.
So if you aren't worried about it automatically knowing if a date/time is available and the appointments are going to be reviewed/approved, it would be fine. If this is a need, it's probably not suited for what you want to do.
