Tim,
It takes a while to go through all of the priority support items and circle around to the forum topics here so please try to be patient with us.
The forms are designed to purposely inherit some of their styling from your theme. That way, the forms generally match the look & feel of your theme pretty closely out of the box. There isn't a built in way to override your theme styles. If you don't like the form styling in your theme, I would suggest
1. make a backup copy of your theme stylesheet
2. Once it's backed up - remove all of the form-relevant styles from the stylesheet.. any rules related to the label, input, select & form elements. That way, the default form styling should be applied without any additional influence from your theme itself.
