Or can it go live immediately? I will have the form only display for logged in users (and not allowing registrations) so that my client can easily post updates to location (food truck). I figured gravity forms would be the cleanest way for him to do it, but the posts need to go live immediately.

Does a post submitted by form *have* to be a draft?

You can set the post status on the post title and/or the post body field when editing the field in the form builder.
