In some email clients, it seems that the email notifications to admin do not show the fields or formatting. I know the notifications are set up correctly because if I use my email, they work fine.

We've never had any reports of the email notification content not displaying properly. So this is something new and not something we have seen before.
Are your notifications simply using the {all_fields} merge tag or have you customized the notification message?
What email clients are experiencing this problem? Can you provide any screenshots and examples showing those that are working and examples of those that are?
