I track the responses to form entries (as many do) by using the notes panel and using the drop-down to send the submitter a copy of the note - What is missing is...
1) to be able to see if the note was sent to the submitter or weather it was just an internal note
2) simple bold / italic or even html formatting in the notes and displaying line breaks.

Three more ideas in similar vein to the above:
(1) The ability to add addresses for the note to be sent to. This could be a text entry (preferably with multiple addresses supported) or it would also be rad to be able to add items for the drop down.
(2) I'd like to be able to "resend" admin emails even if admin emails are turned off in the form notifications. That way I don't need to set up the initial auto-email but can easily email the forms to an admin later if I want.
(3) I'd like to be able to optionally include the form entry in the note email (probably a check box next to the note by the "also send email..." drop down).
I'm hoping to have some time over the next couple of weeks to explore these things from a plugin perspective but thought I'd list them here as well!
