When I click off "show values" -- my numbers aren't being taken into account (not adding up).
But when I check it on -- it works out but than in the Entries section it only shows the values not the labels.

That's how Gravity Forms is set to work when you enable values. What is your use-case here?

If I disable the values does that mean that the numbers will not be calculated?

What I mean by a use-case is what exactly are you using the values for in your form, there might be another way to achieve what you are doing here. Can you provide a link to your form and detail what you are trying to do specifically with the enabled values?
I am simply using the Calculation aspect of "Number". I'm adding up all of the values.
If I disable the "show values" -- does that mean the numbers won't be there?

Yes, that is correct.
Is there a way where I can show labels and have values activated?
Example:
Food. 2
Health. 3
Fitness 4
I want the values to be added but the labels to be shown in my Entries.

Daniel, I do not know of a way to do this. When you enable values, that is what shows up in the entry.
Can you ask your programmers if there is a way?
Or perhaps have this work for an update in the near future?

This is one of those rare situations where you want it both ways, and that's not something we have options for, but I will mention it to our development team and show them this thread. They currently have a full slate though and probably won't even be able to look at something a niche as this until early next year.
