Using your plugin, will I easily be able to create this form and format the email that is sent.

Currently Gravity Forms does not have a pricing field like the one you linked to. It doesn't allow pricing lists like in that example so it wouldn't be a good fit for that type of form. It is a field type we would like to tackle in the future.

HOWEVER it is a field we are adding in the 1.5.3 release (no calculations, just a list type field where you can set the columns and allow users to input multiple values). So minus the calculations it is a field we plan on introducing in the next feature release.
You do have control over the emails, so once we add this field type you would be able to do what you describe.

When is the release schedule?
Can I use my current code on the form or do I need to recreate it?

1.5.3 will most likely be released in June. I'm not sure by what you mean by use your current code on the form. When 1.5.3 is released all users will be able to upgrade to it.
