Hello,
I don't want to have people have to input first and last name on my form. When I click the drop down to change the option in form design panel, it won't drop down to give me the option to change this. Is there something I am going wrong here?

You should be able to select simplistic. If you can't there is most likely a conflict with a plugin or theme that is breaking things.
Can you try the following and see if you can use the drop down properly?
