We just moved our website to a new server and for some reason when one fills out a form it does not get emailed to the email addresses that I have specified - since I have a new IP address is there something I need to change/Update?

There isn't anything you should have to change with Gravity Forms, however since you are on a new server it could be something server related. It might be you need to send email using SMTP in order for emails to be sent.
You may need to install and configure (talk to your web host for settings) this SMTP plugin for WordPress:

I would start with this change to see if that resolves it.
