Is it possible to have say 3 sites, all capturing data to one Campaign Monitor account? and create seperate lists?

Yes. You would activate Gravity Forms and the CampaignMonitor add-on on all 3 sites and have them feed into the same Campaign Monitor account. Which list they go to is configurable when you setup your Campaign Monitor feeds.
