I want to create a directory of life coaches so that each coach can use form to submit their own data such as name, website, state, niche area, email address, short bio sketch, etc.
Is there documentation on how to do this?

There isn't any specific documentation on "how to create a business directory", but it sounds like you just need to create a form using the post fields that create posts in a "life coaches" category. Then the category itself is your directory. You can always use custom category templates to display the information however you'd like.
