Since upgrading to the latest Gravity Forms my notification emails display all of the underlying HTML table structure in my mail client. I've tested in both the Gmail web client as well as iOS mail.
The notifications are stup to send all fields. I tried creating a new form and get the same results.
Here are our instructions for troubleshooting notifications - http://www.gravityhelp.com/documentation/page/Troubleshooting_Notifications Most likely the issue you are experiencing is due to a plugin conflict with some other plugin encoding HTML values so that they show up incorrectly or changing the header of the e-mail message from html to text.
