I would like some way to automatically notify the email address associated with a post submitted that their form has been published. Ideally it would allow me to have some canned text that includes the notification and the url of the approved post which is sent when published. Any addon or other ways this may be done?

This isn't a built in feature. You would have to either email them directly or you could use the entry notes functionality, edit the entry that created the post and leave a note and check the checkbox to send that note via email.
