For some reason, when I try to create the notifications emails, the text colour is white on the white background, so I can't actually see what I'm doing on there.
There isn't a problem on the other forms, such as creating a page or post.

Are you working in the Visual or HTML tab and Admin or User notification?
It's in the user notification section of the form.
I thought I'd make a quick video, so you could see what I mean.

I just tried Chrome (previously it was Firefox) and get the same thing.

Sorry, I thought I'd checked, but it is on the HTML tab that I have that problem, so just using the Visual view, I can see what is typed in.

Oh, there is still one problem. Selecting a merge tag doesn't add it to the main box, though it does work within the subject box.
You're going to want to test for theme/plugin conflicts here, you can follow the instructions here on how to do so:
