Is there any way (besides jQuery) to auto-clear default messages in field form boxes? I didn't see any boxes or options for this..so didn't know if it was available. Adding jQuery for this is a little over the top. If there isn't this option or customization, can it be available in the future? :)

This isn't currently a feature. It's planned for a future release. It's doable, as you mentioned, with jQuery. Pretty much this is how it would be implemented as a feature also (only automated) so it's not too far over the top in terms of implementation.
We only know what major features we are planning on developing for the next release. Minor features, such as this, are implemented on a ad hoc basis as development time allows. We focus on the major features and then pick minor features to add after that.

No updates on this feature from us. However, in the meantime, a 3rd party plugin called Gravity Forms Placeholders which does what you are looking for, I believe:
