Yes, you would have to add multiple Post Category fields to your form and then instruct them to select multiple categories.
I'm doing this now. The problem is that there's no way to set the default to a non-category. That means that if they don't choose one, you get the first one in the list. Even with no dupes turned on it's a problem. I have this in as a feature request. I just hope it makes into the 1.5 release. I'm desperate for this.
It will be in the 1.5 release. We will have an option on the Post Category field to add a default first option (that doesn't save as a value) and you can type in what the first option should say (such as "Please Select Category").

Sub-Category
Sub-Category 2 (Optional)
So that would add every category they selected to the list?
Yes, that would add each category selected to the post.
Are there any plans for providing a checkbox interface for the categories in addition to a drop-down box?
My architecture is dependent on multi-faceted classification and, with about 60 categories, it's not practical to add 60 category drop-downs.

Yes, there are plans for providing both checkbox and radio button field types for the Post Category field. It is something we will be adding, although probably not in the 1.5 release as we are trying to get it out the door relatively soon.

Yes, ability for the user to select multiple categories would be a good enhancement.
